Over time, natural raw honey will crystallize and air bubbles will rise to the top of the jar. This causes the thicker, swirly white layer to form. This process is a sign that the honey has been packed naturally, without any heating or added artificial sugars.
To de-crystalize honey, place the jar of honey in a pot of warm water and let it slowly warm up until it returns to a liquid. Gently stir the honey while it is heating. Honey will slowly re-crystalize over time, you may have to warm it up more than once.
